High Protein Breakfast Muffins
Ingredients:
- 1 cup oats
- 1 cup almond flour
- 1/2 cup protein powder (vanilla flavored works well)
- 1 tsp baking powder

- 2 ripe bananas, mashed
- 2 eggs
- 1/4 cup honey or maple syrup
- 1/2 cup Greek yogurt
- 1/4 cup milk of choice
- 1 tsp vanilla extract
- 1/2 cup mixed nuts or seeds (such as chopped almonds, pumpkin seeds)
Instructions:
- Preheat your oven to 350°F (180°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the oats, almond flour, protein powder, baking powder, and salt.
- In another bowl, combine the mashed bananas, eggs, honey or maple syrup, Greek yogurt, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the mixed nuts or seeds.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
