Spring Pea Pesto Recipe
Ingredients:
- 2 cups fresh or frozen peas
- 1/2 cup grated Parmesan cheese
- 1/2 cup toasted pine nuts
- 2 cloves garlic
- 1/4 cup fresh basil leaves
- 1/4 cup fresh mint leaves
- Juice of 1 lemon
- 1/2 cup extra virgin olive oil
- Salt and pepper to taste
Instructions:
- Start by boiling a pot of water and cook the peas until they are tender, about 3-4 minutes for fresh peas and 5-6 minutes for frozen peas.
- Once the peas are cooked, drain them and transfer to a blender or food processor.
- Add the grated Parmesan cheese, toasted pine nuts, garlic cloves, fresh basil leaves, fresh mint leaves, and lemon juice to the blender or food processor.
- Pulse the ingredients a few times to combine.
- Slowly drizzle in the extra virgin olive oil while continuing to blend until you achieve a smooth and creamy consistency.
- Taste and season with salt and pepper as desired.
- If the pesto is too thick, you can add a little bit of water or extra olive oil to thin it out.
- Once the pesto reaches your desired consistency, transfer it to a serving bowl.
- You can enjoy the pesto immediately or refrigerate it for later use.
