Ricotta Pancakes with Strawberry Compote
Ingredients:
- 1 cup ricotta cheese
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 2 tablespoons sugar
- 2 eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 tablespoon butter (for cooking)
Strawberry Compote:
- 1 cup strawberries, hulled and sliced
- 2 tablespoons sugar
- 1 tablespoon lemon juice
Instructions:
- In a large bowl, mix together the ricotta cheese, flour, baking powder, sugar, eggs, milk, vanilla extract, and salt until well combined.
- Heat a non-stick griddle pan over medium heat and melt the butter.
- Spoon the pancake batter onto the griddle and cook until bubbles form on the surface, then flip and cook the other side until golden brown.
- While the pancakes are cooking, make the strawberry compote by combining the strawberries, sugar, and lemon juice in a saucepan over medium heat. Cook until the strawberries break down and the mixture thickens.
- Serve the ricotta pancakes topped with the strawberry compote.
